现今素食愈来愈多变化,烹调方式亦有惊喜,就如位于中环的新店「圆」一样,中西合璧带来清新素食 Fine Dining 新体验!
“圆”的菜单以季节时令食材配合大自然根本为理念,不含五辛,其中的午市嚐味菜单包含迎宾饮品、餐前小食、凉菜、汤品、主菜、主食及甜品。先来以苦瓜、芹菜、青瓜、羽衣甘蓝、青苹果打造的”清新五素”,之后有自家制餐前点心和时令腌菜,包括”冬姜.冰菜”、”橄榄菜.螺丝卷”等,后者以潮汕橄榄菜制成”橄榄菜牛油”,配上热腾腾、一蒸一炸的螺丝卷一起吃,咸菜滋味齿颊留香。

The cold dish “Jade Tofu” stir-fries the green bean paste until it becomes as smooth as tofu, and then adds fresh black truffle pearls made with molecular gastronomy techniques. The soup “Matsutake Chrysanthemum Water Shield” is made by adding simmered matsutake mushrooms, giving it a refreshing and mushroom fragrance. The chef also uses delicate knife skills to cut the soft and tender tofu into fine strands, resembling a blooming chrysanthemum!
主菜「水晶抄手」以莲藕薄片裹着各式蔬菜粒、五豆泥和桃胶,晶莹剔透,再倒入高汤一并享用,而主食「素鲍鱼拌辣稻庭冷面」口感微辣而清新。
最后一道甜品“荔枝”的造型有如其名,并于杏仁和朱古力脆皮之中包裹着充满云南玫瑰香味的荔枝慕斯及荔枝肉茸,清甜带香!
