东京人气拉面小店湾仔开店!跟随总店做法/必试浓稠汤底拉面

来自东京的人气拉面小店「麺心國もと」最近登陆湾仔,大部分食材由日本直送,而且由汤底、面条、配料及调味等细节都跟足总店做法!

麺心國もと

「麺心國もと」的汤底非常讲究,例如盐拉面就用上四种不同粗细和咸度的盐混合煮成,而且静待两天令味道更醇厚。店家也用上葱油、蒜油、鸡油和贝柱油四种自制香油配搭不同拉面,并加入柚子皮提升风味。面条方面由香港面厂依据指定配方,每天新鲜制造三款粗细度的拉面。

麺心國もと

“麺心國もと”在香港店主打五款招牌拉麵,必試包括”濃厚拉麵”,質感濃稠的湯底用上雞腳、豬手、豬骨、魚乾熬製,大約18小時才可煮出約30碗份量!再加入鰹魚粉,配上幼身拉麵、厚切醬油浸五花腩叉燒,風味十足。

The Japanese-style mixed noodles in the store are made with thick and chewy ramen noodles, seasoned with garlic oil and soy sauce, and served with fish soup. There are also dipping noodles, where a thinner dipping sauce is made by adding garlic oil to the fish soup, paired with thinner noodles that are easier to coat with the sauce, highlighting the fish flavor!
