Tokyo’s popular ramen shop Wan Chai opens a new branch! Follow the same method as the main store and try their rich and thick soup-based ramen.

The popular ramen shop “Menkokuni Moto” from Tokyo recently opened in Wan Chai. Most of the ingredients are directly imported from Japan, and the soup base, noodles, toppings, and seasonings are all made following the same methods as the main branch!

麺心國もと

The soup base of “Men Shin Kuni Moto” is very particular. For example, the salt ramen is cooked with a mixture of four different coarseness and saltiness of salt, and it is left to sit for two days to enhance the flavor. The restaurant also uses four types of homemade oils, including scallion oil, garlic oil, chicken oil, and scallop oil, to pair with different types of ramen, and adds yuzu peel to enhance the flavor. As for the noodles, they are made fresh daily by a designated noodle factory in Hong Kong, following a specified recipe, and come in three different thicknesses.

“Menxin Guo Mo” Hong Kong store features five signature ramen dishes, a must-try is the “Rich Ramen”. The thick and creamy soup base is made from chicken feet, pork trotters, pork bones, and dried fish, which takes about 18 hours to cook and yields approximately 30 bowls! It is then topped with bonito powder and served with thin noodles and thickly sliced soy sauce-marinated pork belly char siu, creating a flavorful combination.

The Japanese-style mixed noodles in the store are made with thick and chewy ramen noodles, seasoned with garlic oil and soy sauce, and served with fish soup. There are also dipping noodles, where a thinner dipping sauce is made by adding garlic oil to the fish soup, paired with thinner noodles that are easier to coat with the sauce, highlighting the fish flavor!
