Umai has recently launched a new sushi chef’s menu, featuring seasonal ingredients. For example, there is “Miyazaki Tsumoto-style flatfish with homemade Nanko plum sake vinegar sauce,” using 7-day aged flatfish to enhance the texture of the sashimi, complemented by sake made from Kishu Nanko plums, which brings out the freshness of the fish.
Another sashimi dish, “Miyazaki Tumoto-style Bonito with Yuzu Vinegar,” is equally full of flavor. The specially made vegetable yuzu vinegar adds a refreshing note to the naturally rich bonito, while the sweet and sour taste highlights the freshness of the fish.

“Sea Urchin Rice” is the highlight of this Omakase! This dish uses Genbei rice and Edo-style red vinegar rice, resulting in plump and chewy grains. Combined with the rich flavor of the Hokkaido Nemuro red sea urchin and the savory taste of fish roe, it offers a deep umami experience that leaves you wanting more with every bite!
In terms of sushi, there are “Hokkaido Botan Ebi,” “Shimane Sea Bass,” “Tottori Wild Bluefin Tuna,” as well as “Grilled Hokkaido Geoduck,” “Kagoshima Mackerel with Karuizawa Smoked Cheese and Fried Scallions,” Toro hand rolls, and miso soup, all quite abundant.
