Central’s New Asian-French Fusion Restaurant! Light yellow decor with a golden pheasant mural/”Chou Pu” Basque cheesecake.

Goldfinch, a recently opened restaurant in Central, features a fusion of Asian and French cuisine. Outside the restaurant, there is a large mural of a goldfinch created by artist Michelle @breathe_atelier. Inside, the restaurant is decorated in a light yellow color, with multiple hand-painted goldfinch murals, reflecting the restaurant’s name.

Goldfinch incorporates French elements into its appetizers, main courses, and desserts, making the cooking methods and presentation of Asian ingredients more diverse. The appetizer is inspired by the Malaysian Nyonya dish “Kuih Pie Tee,” with a crispy outer layer and a filling made with chutoro, along with grapes, bonito, and wasabi jelly, creating a flavorful and refreshing taste.

The main course is also infused with French cooking techniques, such as the “Zhanjiang Chicken” which uses flavorful Zhanjiang chicken. It is marinated with traditional French spices overnight and then air-dried for several hours. It is then slow-cooked and the chicken skin is pan-fried to make it crispy on the outside and tender on the inside. It can be paired with three different homemade sauces to experience different flavors. Another signature dish, “Beef Short Ribs,” takes inspiration from Indonesian Batong beef. The beef short ribs are cooked slowly to make the meat melt in your mouth, and they are served with Italian corn foam and kale to enhance the flavor profile.

In terms of desserts, there is a Basque cheesecake called “Chrysanthemum Pu’er” that incorporates Chrysanthemum Pu’er in its preparation. It has a subtle Pu’er tea fragrance and a sweet but not greasy taste. Paired with homemade chrysanthemum ice cream, it is full of sweet and aromatic flavors.
