In Central H Code, the newly opened Vietnamese-French fusion restaurant SẾP features black charcoal wooden walls that echo the smoky barbecue, while bamboo walls and ceilings rich in natural atmosphere represent the beauty of Vietnam’s nature. The lobby is adorned with French colonial art and golden wall panels, along with an open kitchen equipped with barbecue facilities, allowing guests to enjoy watching chefs cook up delicious dishes up close.
The restaurant specializes in delicate Vietnamese-French fusion cuisine, blending French cooking styles with the dining culture of major cities in Vietnam. During the trial period, the restaurant offers a tasting menu for 2 people with 8 dishes, featuring dishes such as “Hoi An Crispy Three-Yellow Chicken,” inspired by the historical city of Hoi An’s “Chicken and Papaya Salad.” The outer layer of the air-dried three-yellow chicken is coated with Galangal ginger and Kampot pepper, served with marinated green papaya and kaffir lime leaf salad.
Another smoked barbecue dish, “Sabah Highland Smoked Premium Beef Ribs,” inspired by the traditional wood fire cooking of the ethnic minorities in northern Vietnam. The 44Farm beef ribs from Texas are dry-aged and then smoked with 30% walnut wood and 70% lychee wood. The “Banana Leaf Wrapped Chilean Sea Bass” is a reinterpretation of the Hanoi specialty grilled fish dish “Cha Ca La Vong,” where wild-caught Chilean sea bass is wrapped in banana leaves, grilled over charcoal, and slow-cooked, served with a lemon coriander champagne white cream sauce, delicious in taste.
In addition, from November 28th to December 31st, SẾP will collaborate with the whisky brand Montlach Single Malt Scotch Whisky to offer a limited-time whisky pairing menu, including 6 dishes. The “Smoked Coulette” will be paired with Montlach 16 years, while the dessert “Original Fire-Baked Molten Chocolate Pudding” will be paired with Mortlach 12 years, perfect for friends who enjoy wine pairing with food.
