“Salisterra” is composed of the Latin words “Salis” and “Terra,” meaning “salt” and “land” respectively, symbolizing the abundance of Mediterranean cuisine. To echo this theme, the restaurant’s decor also features earthy tones of the Mediterranean, such as a long bar counter paved with rustic Brazilian red marble, dining tables with marble tops, complemented by towering bronze sculptures at the entrance, and specially designed five-meter art chandeliers.
The restaurant is run by Michelin-starred chef Jun Tanaka from London, drawing inspiration from the cuisine of France and Italy’s coastal regions, capturing the rhythm of the seasons with fresh seasonal ingredients. Signature dishes include over 7 types of handmade Italian pasta, such as braised oxtail tortellini, lobster tortellini, and duck tortellini, as well as charcoal-grilled veal chop with morel mushrooms, grilled miso Japanese sea bream with pickled lemon and fennel, and more. What sets it apart is the use of different specialty ovens, adding a unique smoky aroma and crispy texture to the dishes.
In addition, there are colorful and abundant vegetable dishes, especially recommended are sweet and sour carrots with coconut yogurt and roasted cauliflower with pomegranate. As for desserts, there are freshly baked sweet pastries every day, with a crispy and soft texture.
