This dish combines fresh raw prawns with French fried prawns, allowing you to taste the sweetness and elasticity of raw prawns, as well as the crispy texture of fried prawns. Paired with traditional English pea soup, the dish exudes a fresh oceanic vibe.

The second appetizer can be chosen from two options. The mushroom clear soup stewed foie gras is inspired by “autumn nourishment”, with the mushroom clear soup flavored with kombu, mushrooms, black truffle, and other ingredients, bringing out a rich and sweet taste. Paired with the Fusion cooking method of stewed foie gras, the whole dish has a more fragrant and rich flavor, achieving a warming effect. Earl Grey tea-smoked salmon is cooked at 48 to 52 degrees low temperature oil sealing, accompanied by a generous amount of smoky and salty North Pacific caviar, with a soft texture and rich layered taste.

Next up is the classic dish of Marseille seafood soup from southern France, which combines mussels, shrimp, potatoes, tomatoes, oranges, and other ingredients, along with Rouille sauce made from potatoes, garlic, and mayonnaise, creating a rich and flavorful taste. For the main course, there are two options: pan-seared monkfish with nutty butter sauce or seared slow-cooked beef tenderloin with passion fruit sauce. The former involves slow-cooking the fish roll first, then searing it with butter sauce and lemon juice, resulting in a tender and refreshing texture; while the latter offers a soft beef tenderloin paired with a sauce made from passion fruit and beef juice, balancing out the richness of the beef and making it irresistibly delicious.
