Intervals collaborates with top bartenders worldwide to present a virtual cocktail experience.

Located at the Sky Corridor of Hong Kong International Airport, Intervals Sky Bar & Restaurant is launching an exciting new series called “Intervals Cocktail Globetrotting,” offering travelers an unparalleled journey through global fine wines. This innovative program is curated by the Intervals team in collaboration with several award-winning mixologists from around the world, adding endless fun and a luxurious experience to the time before boarding.

This interdisciplinary virtual guest bartender series launches different signature cocktails from top international bartenders each month, accompanied by exclusive virtual showcases. It allows travelers not only to see firsthand how these unique cocktails are crafted, but also to gain insights into the bartenders’ creative inspirations and recommended local attractions. This culinary feast officially kicks off on August 15th and will conclude in March 2025. On the 15th of each month, Intervals will update the cocktail menu to ensure that each experience brings freshness and surprises.

The first event in the series features renowned bartender Andrew Ho from the famous bar Hope & Sesame in Guangzhou. Andrew will present his signature cocktail, ANGO, which is based on the aged sweet wine Malusalem Gran Reserva 15 Year, combined with Angostura bitters, Italian balsamic reduction syrup, lime juice, and beet juice, perfectly showcasing the sweet and sour flavor profile of the traditional Cantonese dish pig’s trotter with ginger.

Next, Minakshi Singh from Delhi’s Sidecar Bar will take over in September. This bar ranked 26th in the World’s 50 Best Bars in 2022. Minakshi will present the Gondhoraj cocktail, made with Bengali lime mixed with Tanqueray gin, complemented by Sidecar’s special jasmine-infused tonic, emitting a unique fragrant aroma. In October, Diveysh Ramesh from Singapore’s Mandala Club will serve the Oo-Meshu Fizz, made with milk, oolong tea, and the Japanese plum wine “Nautrale,” showcasing the natural flavors of plum wine.

In November, Alvaro Garcia and Tito Pin-Perez from the Rayo bar in Mexico will present the Number 1 cocktail, a high-alcohol concoction featuring Misterios Mezcal Espadin, Matusalem Gran Reserva Rum aged for 15 years, and Amaro Averna. This drink showcases rich flavor layers of beef, bacon, and coriander. In December, Holly Graham, the founder of Tokyo Confidential, along with her head bartender Waka Murata, will introduce the Cheung Fun Old Fashioned, inspired by the beloved Hong Kong dish of rice roll. This cocktail combines peanut and sesame-infused bourbon whiskey with orange bitters, topped off with caramel soy sauce, delivering a unique sweet and savory experience.

In January next year, Jon Lee from the Penrose Bar in Kuala Lumpur will kick off the event with the Penrose Gibson, a cocktail made with pickled shallot juice, gin, sake, and Tio Pepe sherry, enhanced with a touch of Naked Malt Scotch whisky for a distinctive flavor experience. In February, Davide Boncimino from the Vida Rica Bar at the Mandarin Oriental Hotel in Macau will present Ginger Snaps, crafted with Roku gin, Bianco vermouth, and elderflower liqueur, complemented by fresh ginger juice and guava juice, creating a spicy yet refreshing palate.

Finally, the series will perfectly conclude in March 2025 at Kaffir Lime, brought to you by Ronnaporn K., co-founder of Mahaniyom Cocktail Bar in Bangkok. This cocktail, based on bittersweet vermouth infused with Thai kaffir lime leaves and sweetened with tequila lime oil, combines Fernet Branca liqueur and tonic water to present travelers with the refreshing flavors of Bangkok’s bright sunshine.

Intervals not only designed exclusive snacks to pair with these unique cocktails but also prepared a mini travel guide for every tasting traveler. This guide includes recommendations for attractions, tips on drinking culture, and bar recommendations from industry experts. These guides will ultimately be compiled into a book, becoming the ultimate guide for Intervals, leaving travelers with precious memories.

This eight-month “Intervals Cocktail Globetrotting” series will bring unlimited surprises and luxurious enjoyment to travelers, with a monthly updated cocktail menu ensuring that every visit is a brand new taste adventure.
