呢家隐身喺太古嘅饭团小店「花鸟」,完全体现到日本人做事嘅认真程度!每日新鲜人手制作嘅饭团全是日本人,早上8时起便开始准备材料,米饭用日本Omakase级数嘅白米,需提早一日浸米,翌日以双层盖嘅土锅煲饭,更坚持用日本天然水,只为做出最贴近日本吃到嘅味道!米饭煮好便以味醂、鲣鱼及秘制配方调味,光是米饭已用上超过24小时!
米饭每颗烟韧饱满,馅料更有惊喜,其中数款没裹上紫菜片,反面是黏上满满的木鱼花,用北海道鲣鱼干,每日早上自家机器即日刨制成薄片,将整棵饭团完全包裹,每一口都有鲜香味另分别有配上梅子(32元)或芝士口味(38元)。
店内约有20款口味,全部都用日本食材自家制作或调味,「A4宫崎烤牛肉配黑洋葱山芥末酱」($45),「极上高汤酱汁大虾天妇罗」($38),「北海道产银鲑鱼酱油腌鲑鱼子亲子饭」($38),「宫崎县无农药芥菜北海道炙烧明太子」($32),「三平信州蒜味味噌梅子酱拌原粒大蒜」($24)。不论是海鲜、肉类、素食也有选择,饭团可配玉子烧或炸鸡、味噌汤等,如果用料及制作来讲,这个价格十分相宜。
飯糰每天早上由幾位日本人逐件包裝,看幾位日本人以將量度好嘅米飯分量放入飯糰模,再逐一加入餡料,然後以人手將飯糰塑形,再裹上紫菜及其他配料,甚至用上夾子放上食材,難怪每日只能限量做出約60個飯糰,11:30am開店,約1時多已售罄。

For savory options, there are bento boxes with fried pork cutlet in miso sauce, and they also have “Japanese Yuzu Hanayama Manju” ($15) directly imported from Japan. These breads are made with Okinawa black sugar and filled with a paste made from Wakayama yuzu peel, which is rarely seen in other parts of Hong Kong. It turns out that the owner operates a Japanese food trading company, so most of the retail food products in the store are also directly imported or exclusive.
