中环小巷墨绿色 Fusion 餐厅!腊肠卡邦尼手工意粉/腊鸭腿意式云吞/炭烧鳗鱼

中環永吉街中段、兩條繁忙大道中的小巷有個較為隱世的位置,當中有一間墨綠色主調的餐廳 daap,店內裝潢走舊式歌廳風格,而廚房設計於餐廳中央,可以坐於吧桌觀賞主廚準備各款菜式。

店名”daap”取名自粤语拼音”㗳(daap1)”,主打新派多国Fusion菜,而餐厅近日推出的五道菜季节晚餐菜单就把腊肠、腊鸭等中式传统食品,结合意法烹调技巧!

主菜之一的「臘鴨脾意式雲吞配法式鴨湯」把意大利雲吞換成薄薄的中式餃子皮,而餡料的臘鴨脾就手撕成鴨肉絲,釀入醃漬白蘿蔔及碎蔥花,再配上法式鴨清湯及灑上烤焗成脆脆的臘鴨皮,充滿濃郁飽滿鹹香。

The classic Carbonara adds lap cheong, and the “Lap Cheong Carbonara Handmade Pasta with Onsen Egg” uses homemade pasta with a chewy texture, replacing bacon with lap cheong, which has an oily fragrance. Finally, it is topped with an onsen egg and sprinkled with grated Parmesan cheese. Another dish, “Grilled Eel with Jinhua Ham and Spinach,” chops Jinhua ham and spinach into small pieces and stuffs them inside the eel, which is then rolled and grilled. During the grilling process, it is brushed with a special eel sauce, resulting in crispy skin and tender meat, with the Jinhua ham bringing out a subtle salty flavor.
