In the middle section of Wing Kut Street in Central, there is a somewhat hidden location between two busy main roads. Inside, there is a restaurant called daap, with a decor that follows a dark green theme, reminiscent of old-style cabarets. The kitchen is designed in the center of the restaurant, allowing customers to sit at the bar table and watch the head chef prepare various dishes.
The store name “daap” is derived from the Cantonese phonetic “㗳 (daap1)”. It specializes in modern fusion cuisine from various countries. The restaurant recently launched a five-course seasonal dinner menu that combines traditional Chinese foods such as Chinese sausage and preserved duck with Italian and French cooking techniques!
One of the main dishes, “Italian-style Wonton with French Duck Soup,” replaces Italian wontons with thin Chinese dumpling wrappers, and the filling of cured duck spleen is shredded into duck meat, stuffed with pickled white radish and chopped scallions, and served with French duck broth and sprinkled with crispy cured duck skin, full of rich and savory flavors.
Classic Carbonara pasta is made with the addition of lap cheong, replacing the bacon, which adds an oily fragrance. The dish is then topped with an onsen egg and sprinkled with grated Parmesan cheese. Another dish, “Grilled eel with Jinhua ham and spinach,” involves chopping Jinhua ham and spinach into small pieces and stuffing them inside the eel before rolling it up and grilling it. During the grilling process, a special eel sauce is brushed on, resulting in a crispy skin and tender meat, with the Jinhua ham adding a subtle salty flavor.
