The main specialty food includes smoked tuna belly with Japanese Shikoku-produced soy sauce, which may seem simple but actually involves many steps! First, the seasonal tuna belly is aged for at least one week to remove moisture and enhance the flavor and texture. When served, it is garnished with whole mustard seeds to highlight the oiliness of the tuna, and the homemade Shikoku-produced soy sauce with added Tsukudani-style yolk sauce adds richness to the taste!

Sea urchin lovers can try this dish! Japanese-made corn is whipped into a mousse-like texture and paired with bonito broth to create a rich and fragrant jelly. Topped with seasonal Japanese sea urchin, it has a fresh and smooth texture! The inspiration for Wagyu beef and sea urchin rice comes from clay pot rice. It uses chewy Niigata Koshihikari rice, pan-fried Hida A5 or Miyazaki A4 Wagyu beef, and fresh sea urchin, creating a dish that is incredibly satisfying!

It is worth mentioning the goose liver and persimmon paste mooncake, which is made by slow-cooking French goose liver in homemade chicken broth, and then adding Japanese dried persimmons and whiskey as filling. The sweetness of the persimmons pairs well with the richness of the goose liver, creating a crispy yet soft texture.

In addition, there are other delicacies made from fresh Japanese air-freighted ingredients and a variety of top-grade abalone and lobster imported from around the world. There are also options such as Hida A5, Saga A4, Miyazaki A4, and Black Gold Wagyu, which are very rich!
