Wan Chai Ship Street new restaurant with a fusion of Italian cuisine! Hokkaido sea urchin carbonara, Japanese fried chicken with Eastern/Western sauce.

In Wan Chai Ship Street, the newly opened Italian fusion restaurant Trattoria Kagawa by Mihara, the restaurant is themed with olive green representing Kagawa Prefecture in Japan. The restaurant features teppanyaki bar counter seating, allowing guests to enjoy watching the chef prepare delicious food while dining. Behind the teppanyaki bar counter, there are wall paintings, creating a comfortable and stylish atmosphere.

The Japanese head chef, Mitsufumi Mihara, incorporates authentic cuisine from his hometown of Kagawa Prefecture into Italian-style dishes, introducing dishes such as “Japanese Tomato Caprese Salad with Homemade Tomato Sorbet,” which is refreshing and appetizing; while the “Japanese Fried Chicken with Italian Anchovy Sauce” is made with Japanese chicken thigh meat, anchovy fillets, and marinated onions, served with two different sauces – Japanese sesame sauce and anchovy tartar sauce with a blend of Eastern and Western flavors.

Olive-fed Wagyu beef from Kagawa Prefecture is the signature ingredient of this restaurant. This variety of Wagyu beef has a high marbling score, with a rich and juicy flavor. The “Japanese Wagyu thinly sliced with red wine vinegar” allows you to taste the rich flavor of Wagyu cattle fed primarily with olives. The restaurant also offers homemade al dente Italian pasta made with eggs and flour from Kagoshima, including “Carbonara with Hokkaido sea urchin” and “White fish garlic flat spaghetti with dried squid ink.”

There are various Japanese-style Italian dishes, including “Teppanyaki Australian Lobster with Homemade Italian Sauce”, “Teppanyaki Japanese Abalone”, “Cherry Wood Smoked Black Pork with Japanese Sake Butter Sauce”, “Roasted Lamb Rack with Plum French Mustard Sauce”, etc. The homemade desserts also blend Japanese and Italian flavors, such as “Hawaiian Walnut Choux based on the unique airy texture of Japanese cakes”, rich layers of “Tiramisu”, “Japanese Sweet Potato Panna Cotta with Japanese Amazake”, etc.
