Taste the menu of the Central International Cuisine Restaurant! Enjoy the rooftop garden with a view of the Victoria Harbour, savor the sea urchin toast/slow-cooked blue lobster.

Celebrating special occasions calls for choosing a high-quality restaurant! HAKU, which specializes in international cuisine, has moved to the rooftop garden of IFC in Central, overlooking the beautiful Victoria Harbour. Executive Chef Rob Drennan prepares a creative tasting menu using premium seasonal ingredients from Japan and locally, allowing guests to interact with the chef through the Open Kitchen while admiring the chef’s preparation of multiple exquisite dishes like works of art.

The tasting menu offers lunch (starting at HK$680) and dinner (HK$1,980), with a more extensive selection in the evening. Among the 10 exquisite dishes, the standout is the signature sea urchin toast, where Hokkaido sea urchin is spread over buttered bread, accompanied by a tangy yuzu sauce that enhances the sweet taste of the sea urchin.

The fried chicken is made with chicken thigh meat from Yamaguchi Prefecture in Japan, marinated with cheese, so the meat is particularly tender and retains rich juices, served with rich black garlic seafood sauce, caviar, and semi-sour cucumbers. As for the most surprising dish, it must be the slow-cooked lobster, with delicate and tender lobster meat, garnished with fried celery shreds, served with a sauce made from miso and lobster broth, fresh and rich, every bite is unforgettable.

Main course options include 20-hour slow-cooked Kagoshima pork or yuzu pepper beef ribs, both with their own unique characteristics. The beef ribs are tender and flavorful, especially with the aroma of yuzu pepper, and are served with buttery black garlic bread.

Other dishes include golden potato with caviar and white truffle, seared abalone with mustard, and grilled squid with perilla sauce. As for desserts, there is Jerusalem bamboo ice cream, among others. The petit four served at the end is very delicate, putting the finishing touch on a perfect meal.

The restaurant specially tailored a zero pairing tasting menu for those who do not drink alcohol, allowing them to enjoy food with corresponding beverages that are all made in-house.
