Newly opened modern style all-weather restaurant at Admiralty! Special French hollandaise sauce with Benedict eggs, floral and fruity wine.

The Hawk & Aster, the first restaurant under Grand Café, has recently opened in the atrium of Pacific Place. The decor combines a cafe and restaurant, with semi-open seating, and a coffee pavilion connected to a semi-circular bar design, adorned with art paintings on the walls, creating a modern atmosphere.

The Hawk & Aster is an all-day dining restaurant, offering a wide range of breakfast dishes, baked goods, as well as lunch and dinner options. Their signature dishes include three variations of Eggs Benedict using their homemade French “mother sauce” Hollandaise. The Eggs Benedict with caviar and spinach is topped with Avruga smoked fish roe, while the Boston lobster Eggs Benedict is served with their homemade English scones. They also offer a thick-cut smoked salmon Eggs Benedict, served with fresh avocado puree and their homemade sourdough bread.

The lunch and dinner menus are inspired by a small tavern style, such as the signature appetizer “Beef Tartare with Fresh Baked French Baguette”, where the French Alexandre Polmard beef is lightly seasoned and paired with 30-month-aged Parmesan cheese, bringing a salty and multi-textured taste. The classic lobster bisque is enhanced with a touch of sherry, bringing out a subtle sweetness, and served with cheese crisps to highlight the freshness of the bisque. The Swiss rosti uses the chewy Spanish Agria potatoes, fried to a golden crisp.

The dessert menu features a five-layer chocolate cake made with French Valrhona Equatoriale Noire 55% dark chocolate and 80% Guanaja chocolate, rich in flavor. Other options include classic French crème caramel made with Tahitian vanilla oil, homemade ice cream, and sorbet. Coffee is provided by Elephant Grounds, while the wine selection includes a refreshing White Negroni with a hint of floral and fruity notes, as well as a Bloody Caesar made with vodka, Akvavit, tomato juice, and clam juice.
