MUM Veggie, which specializes in Japanese-style vegetarian set meals, is not heavily promoted or sought after by influencers, but it always has a constant flow of customers during lunchtime or holidays, with even queues forming. The customer return rate is extremely high!
The original owner had studied in Tokyo to learn the art of vegetarian cuisine, with the intention of doing it right. At that time, they followed a Japanese “shojin ryori” teacher to learn, and their belief in making vegetarian dishes came from Japanese temples. Even seemingly simple vegetarian dishes require focused research, continuous experimentation, and improvement.
Take a look at the menu, the style of the dishes is very simple, but a lot of thought and time has been put into seasoning and ingredient pairing. It’s as simple as a bowl of rice, with the addition of quinoa, chickpeas, and more, making the flavor and nutrition richer. Similarly, the kombu broth is simple, but with the special addition of sun-dried radish strips and seaweed, it has a more layered flavor.
The owner insists on perfecting each dish before gradually adding more styles. Currently, there are about a dozen cold and hot dishes available. Customers can choose three items ($100) or four items ($125), which come with miso soup, barley tea, and either mixed grain porridge or turmeric rice. Some styles require an additional $5-$10.
The most popular hot items include lotus root with five spices, steamed mushroom tea cup, pumpkin potato cake, and Kanto-style hot pot. For cold items, there are natto with okra, tomato pickled in yuzu vinegar, and more. Whether you are a vegetarian or not, you can eat to your heart’s content here.
