Newly opened “Six Flavors” themed ramen shop in Tai Koo Shing! Bitter melon with miso/lemon juice with sea bream clear soup base.

How many flavors can ramen have? Recently, a new ramen shop called “Mutsumiya” opened in Tai Koo Shing. True to its name, it offers six flavors of ramen: sweet, sour, bitter, spicy, salty, and umami.

First, let’s talk about the soup base. There are two proud soup bases: Rokuweiya original soup and homemade clear soup. The former is made from pork thigh bones, chicken feet, flavorful small dried fish, Rausu kelp, and fragrant wild vegetables. The latter is made from pork bones, chicken bones, chicken feet, and various wild vegetables. There are also two types of noodles, including the chewy Hokkaido noodles with a rich texture and the smooth and slippery Tokyo thin noodles, which are suitable for pairing with rich and clear soup bases.

In terms of ingredients, there are sliced pork char siu made from Japanese Kagoshima pork, braised pork belly char siu, and slow-cooked pork char siu, which offer different flavors and textures. Additionally, there is also tender and smooth slow-cooked Japanese chicken char siu.

As for the “Six Flavors” ramen, which features different flavors, the “sour” flavor represents the “Lemon Sea Bream Clear Soup Ramen” (HK$118), which combines clear sea bream broth with freshly squeezed lemon juice and sweet clams, creating a refreshing and sweet taste. The “bitter” flavor represents the “Mikawa Hachiman Miso Ramen” (HK$98), which directly injects bitter melon into the rich miso soup base. The “spicy” flavor represents the “Green Korean Chili Salt Ramen” (HK$88), which uses clear salt-based broth paired with Korean green chili, bringing a sharp and stimulating spiciness.

There is also a “sweet” flavor representing “Kyoto-style West Kyoto miso ramen” (HK$ 85), a “salty” flavor representing “three-year-aged soy sauce ramen” (HK$ 108), and a “fresh” flavor representing “white soy sauce kelp ramen” (HK$ 128), bringing a rich combination!
